Roasted Garlic White Bean Toast

Ingredients
  

1 bulb of garlic

2 tbsp olive oil (plus more for drizzling)

1 can (15 oz) of white beans (such as cannellini or great northern), drained and rinsed

1 tbsp fresh lemon juice

1 tsp lemon zest

1/2 tsp smoked paprika

Salt and black pepper, to taste

2 tbsp fresh parsley, chopped (or any fresh herb of your choice)

4 slices of rustic bread (like sourdough or ciabatta)

Optional toppings: red pepper flakes, sliced radishes, microgreens

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Cut the top off the garlic bulb to expose the cloves. Place it on a small piece of aluminum foil, drizzle with 1 tsp of olive oil, and wrap it tightly.

        - Roast in the oven for 30-35 minutes until the cloves are soft and golden. Allow to cool slightly before handling.

          Prepare the White Bean Mixture:
