Roasted Lemon Dill Chickpeas & Veggies

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), chopped

1 zucchini, sliced into half-moons

1 medium red onion, diced

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried dill

Zest and juice of 1 lemon

Salt and black pepper to taste

Fresh dill for garnish

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Veggies: In a large mixing bowl, combine the chickpeas, cherry tomatoes, bell pepper, zucchini, and red onion.

      Make the Marinade: In a small bowl, whisk together olive oil, garlic powder, onion powder, smoked paprika, dried dill, lemon zest, lemon juice, salt, and pepper until well combined.

        Combine: Pour the marinade over the veggie and chickpea mixture. Toss everything gently until the vegetables and chickpeas are well coated.

          Roast: Transfer the mixture to a large baking sheet, spreading it out in a single layer. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the veggies are tender and starting to brown.

            Serve: Once roasted, remove from the oven and let cool slightly. Garnish with fresh dill before serving. Enjoy warm or at room temperature!
