Roasted Red Pepper and Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 large roasted red peppers (jarred or homemade)

1 cup fresh spinach leaves

1/4 cup tahini

2 tablespoons olive oil

2 tablespoons lemon juice

2 garlic cloves, minced

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and black pepper to taste

4 large whole wheat tortillas

Optional toppings: sliced avocado, feta cheese, or fresh herbs (like parsley or cilantro)

Instructions
 

Prepare the Chickpeas: In a medium bowl, mash the drained chickpeas using a fork or a potato masher until they are slightly chunky but still have some whole chickpeas for texture.

    Make the Red Pepper Sauce: In a blender or food processor, combine the roasted red peppers, tahini, olive oil, lemon juice, minced garlic, ground cumin, smoked paprika, salt, and black pepper. Blend until smooth and creamy. Taste and adjust seasoning if needed.

      Combine Ingredients: In the bowl with the mashed chickpeas, add the blended red pepper sauce. Mix well until all the chickpeas are evenly coated with the sauce.
