Roasted Salmon and Broccoli

2 salmon fillets (6 oz each)

2 cups broccoli florets

3 tablespoons olive oil

2 cloves garlic, minced

1 lemon (zested and juiced)

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon red pepper flakes (optional)

¼ cup grated Parmesan cheese (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, combine 2 tablespoons of olive oil, minced garlic, lemon zest, lemon juice, chopped dill, salt, and black pepper to create a marinade.

      Marinate the Salmon: Place the salmon fillets in a shallow dish or resealable bag. Pour half of the marinade over the salmon, ensuring each fillet is well coated. Let it marinate for 15-20 minutes while you prepare the broccoli.

        Prepare the Broccoli: On a large baking sheet, spread out the broccoli florets. Drizzle with the remaining 1 tablespoon of olive oil, and sprinkle with salt, black pepper, and red pepper flakes, if using. Toss to coat evenly.

          Arrange for Roasting: Make space on the baking sheet for the salmon fillets amongst the broccoli. Place the marinated salmon on the baking sheet, skin-side down.

            Roast Everything: Put the baking sheet in the preheated oven and roast for 15-20 minutes, or until the salmon flakes easily with a fork and the broccoli is tender and slightly crispy. If desired, sprinkle grated Parmesan cheese over the broccoli during the last 5 minutes of roasting.

              Serve: Once done, remove from the oven and let it rest for a couple of minutes. Serve the roasted salmon and broccoli on plates, drizzled with any remaining marinade if you like. Enjoy your healthy and flavorful meal!
