Rosemary Sea Salt Pretzel Bites

1 ½ cups warm water (110°F to 115°F)

2 tablespoons granulated sugar

2 teaspoons active dry yeast

4 cups all-purpose flour

½ cup unsalted butter, melted

1 teaspoon fine sea salt

¼ cup baking soda

1 egg, beaten (for egg wash)

1 tablespoon fresh rosemary, finely chopped

Coarse sea salt, for sprinkling

Instructions
 

In a large mixing bowl, combine warm water, granulated sugar, and active dry yeast. Let it sit for about 5 minutes until foamy.

    Add the all-purpose flour, melted butter, and fine sea salt to the yeast mixture. Stir until a dough forms.

      Knead the dough for about 5-7 minutes on a floured surface until it becomes smooth and elastic.

        Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place until doubled in size, approximately 1 hour.

          Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

            Once the dough has risen, punch it down and divide it into 8 equal portions. Roll each piece into a long rope, about 1 inch thick, then cut it into bite-sized pieces (approximately 1-inch segments).

              In a large pot, bring 10 cups of water and the baking soda to a gentle boil.

                Carefully add the pretzel bites to the boiling water in batches (do not overcrowd) and boil for 30 seconds. Use a slotted spoon to remove them and place them on the lined baking sheet.

                  Brush each pretzel bite with the beaten egg and sprinkle them generously with coarse sea salt and chopped rosemary.

                    Bake in the preheated oven for 12-15 minutes or until they are golden brown.

                      Remove from the oven and let cool slightly before serving.
