4 cups fresh peaches, peeled and sliced (about 6-8 medium peaches)

1/2 cup granulated sugar (adjust depending on the sweetness of peaches)

1 tablespoon lemon juice

1/2 teaspoon ground cinnamon

1 teaspoon vanilla extract

1 cup old-fashioned rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, melted

3/4 cup buttermilk (or regular milk mixed with 1 tablespoon vinegar)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Peaches: In a large bowl, combine the sliced peaches with granulated sugar, lemon juice, cinnamon, and vanilla extract. Toss to coat the peaches evenly and let them sit while you prepare the topping.
