For the Cookies:

1 cup unsalted butter, softened

1 cup brown sugar, packed

½ cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup semi-sweet chocolate chips

For the Salted Caramel:

1 cup granulated sugar

6 tablespoons unsalted butter, cubed

½ cup heavy cream

½ teaspoon sea salt (plus more for sprinkling)

Instructions
 

Prepare the Salted Caramel:

    - In a medium saucepan over medium heat, melt the sugar, stirring constantly until it turns into a deep amber color (about 10 minutes).

      - Carefully add the butter, stirring until completely melted and combined.

        - Slowly pour in the heavy cream while stirring (the mixture will bubble up). Continue to stir until the caramel is smooth.

          - Remove from heat and add the sea salt. Let it cool for about 10 minutes, then transfer to a jar and refrigerate until ready to use.

            Make the Cookie Dough:

              - Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

                - In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3-4 minutes).

                  - Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

                    - In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.

                      - Fold in the semi-sweet chocolate chips.

                        Assemble the Cookies:

                          - Using a cookie scoop or tablespoon, drop a generous ball of cookie dough onto the prepared baking sheet, leaving space between each as they will spread.
