Ingredients

6 slices of soft white bread

2 large eggs

1/4 cup milk

1/2 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 cup breakfast sausage (cooked and crumbled)

1/2 cup shredded cheddar cheese

2 tablespoons butter (for frying)

Maple syrup (for serving)

Powdered sugar (optional, for dusting)

Instructions

Prepare the Bread: Trim the crusts off each slice of white bread and flatten each slice with a rolling pin to make it easier to roll.

Make the Filling: In a mixing bowl, combine the cooked and crumbled breakfast sausage with the shredded cheddar cheese. Mix well and set aside.

Roll the Bread: Take a slice of flattened bread, place a few tablespoons of the sausage and cheese mixture on one end of the bread slice. Roll the bread tightly around the filling, securing it by pressing it together – repeat with all slices.

Prepare the Egg Mixture: In another bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

Dip the Roll-Ups: Dip each roll-up in the egg mixture, making sure to coat them evenly but not soaking them.

Fry the Roll-Ups: In a large skillet, heat the butter over medium heat. Once melted and bubbling, place the roll-ups seam side down in the pan. Cook for 2-3 minutes on each side until golden brown and crispy.

Serve: Remove the roll-ups from the skillet and place them on a paper towel to absorb any excess oil. Serve warm with maple syrup drizzled over the top and a sprinkle of powdered sugar if desired.
