4 cups stale bread cubes (Italian or French bread works well)

1 cup vegetable or chicken broth

1 cup diced celery

1 cup diced onion

1/2 cup dried cranberries (optional, for a touch of sweetness)

1/2 cup cooked sausage or bacon (crumbled, optional for a heartier stuffing)

1 tablespoon fresh parsley (chopped)

1 teaspoon dried sage

1 teaspoon dried thyme

1 teaspoon garlic powder

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

2 large eggs (beaten)

Olive oil spray (for greasing)

Prep the Bread: If your bread isn’t stale, preheat your oven to 350°F (175°C) and spread the bread cubes on a baking sheet. Bake for 10-15 minutes until they are slightly toasted and dry. Allow them to cool.

    Sauté Vegetables: In a skillet over medium heat, add a drizzle of olive oil. Sauté the diced onion and celery until they are softened, about 5-7 minutes. Remove from heat and let them cool slightly.

      Combine Ingredients: In a large mixing bowl, combine the stale bread cubes, sautéed onions and celery, dried cranberries (if using), crumbled sausage/bacon (if using), parsley, sage, thyme, garlic powder, salt, and pepper. Mix well.

        Add Liquid: Pour the vegetable or chicken broth over the mixture, then add the beaten eggs. Mix everything until well combined. The mixture should be moist but hold its shape when formed into a ball. Adjust broth or breadcrumbs as needed.

          Form Balls: Using your hands, scoop out a handful of the stuffing mixture and roll it into 1.5-inch balls. Place them on a plate.

            Preheat Air Fryer: Preheat your air fryer to 350°F (175°C) for about 5 minutes.

              Air Fry Stuffing Balls: Lightly spray the air fryer basket with olive oil spray to prevent sticking. Place the stuffing balls in the basket in a single layer, ensuring they are not touching. Spray the tops lightly with olive oil.

                Cook: Air fry the stuffing balls at 350°F (175°C) for about 12-15 minutes, or until they are golden brown and crispy on the outside. You may need to do this in batches depending on the size of your air fryer.

                  Serve: Carefully remove the stuffing balls and let them cool slightly before serving. They are fantastic as a side dish or appetizer!
