Ingredients

2 cups green cabbage, finely shredded

1 large onion, finely chopped

1 cup all-purpose flour

1/2 cup cornmeal

2 large eggs

1/2 cup milk (or plant-based alternative)

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (optional)

Vegetable oil for frying

Instructions

Prepare the Cabbage and Onion: In a large mixing bowl, combine the shredded cabbage and chopped onion. Sprinkle with salt and let it sit for about 10-15 minutes. This process will draw out moisture from the vegetables, making the fritters crispier.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, cornmeal, baking powder, garlic powder, smoked paprika, cumin, salt, and pepper.

Combine Wet Ingredients: In another bowl, beat the eggs and then mix in the milk. Add the egg mixture to the cabbage and onion mixture, along with the chopped parsley if using. Stir until well combined.

Incorporate Dry Ingredients: Gradually add the dry ingredient mix to the wet ingredients, stirring until just combined. Be careful not to overmix—a bit of lumpiness is fine.

Heat the Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. You can test if it's ready by dropping a small spoonful of the batter in; it should sizzle immediately.

Fry the Fritters: Spoon about 2 tablespoons of the batter into the hot oil, flattening it slightly with the back of a spatula to form fritters. Fry in batches, making sure not to overcrowd the skillet. Cook for 3-4 minutes on each side, or until golden brown and crispy.

Drain and Serve: Remove the fritters and place them on a plate lined with paper towels to absorb excess oil. Serve hot, accompanied by a dipping sauce of your choice, such as a tangy yogurt sauce or sweet chili sauce.
