Savory Herb and Cheese Scones

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup cold unsalted butter, cubed

1 cup shredded sharp cheddar cheese

1/4 cup grated Parmesan cheese

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)

1 tablespoon fresh chives, finely chopped (or 1 teaspoon dried)

1 cup buttermilk

1 egg, beaten (for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper until well combined.

      Cut in Butter: Add the cubed cold butter to the flour mixture. Using a pastry cutter or your fingertips, cut and rub the butter into the dry ingredients until the mixture resembles coarse crumbs.

        Add Cheese and Herbs: Stir in the shredded cheddar cheese, grated Parmesan, chopped rosemary, and chives until evenly distributed.

          Combine with Buttermilk: Make a well in the center of the dry ingredients and pour in the buttermilk. Gently mix with a fork until just combined; be careful not to overmix. The dough should be slightly sticky.

            Form the Scones: Turn the dough onto a floured surface and gently knead it a few times until it comes together. Pat the dough into a 1-inch thick circle. Use a sharp knife or a pastry cutter to cut the dough into 8 wedges.

              Prepare for Baking: Place the wedges on the prepared baking sheet, spaced slightly apart. Brush the tops with the beaten egg to give them a lovely golden color when baked.

                Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.

                  Cool and Serve: Remove the scones from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack. Serve warm or at room temperature.
