1 cup green or brown lentils, rinsed and drained

2 cups vegetable broth

1 medium onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon salt (more to taste)

1/4 teaspoon black pepper

1 medium carrot, grated

1/2 cup corn kernels (fresh or frozen)

1 tablespoon lime juice

Fresh cilantro, chopped (for garnish)

For the Avocado Lime Sauce:

1 ripe avocado

1/4 cup Greek yogurt (or vegan alternative)

2 tablespoons lime juice

1 tablespoon olive oil

Salt and pepper to taste

Water (to thin, if needed)

For Serving:

8 small corn or flour tortillas

Shredded lettuce

Diced tomatoes

Sliced radishes

Slices of lime

Instructions
 

Cook the Lentils:

    - In a medium saucepan, combine the rinsed lentils and vegetable broth. Bring to a boil, then reduce the heat to low and let simmer for about 20-25 minutes or until the lentils are tender. Drain any excess liquid if necessary.

      Sauté the Vegetables:

        - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

          Combine Lentils and Vegetables:

            - Add the cooked lentils to the skillet with the onion and garlic. Stir in the ground cumin, smoked paprika, chili powder, grated carrot, corn, salt, and black pepper. Mix well to combine, cooking for another 5 minutes until heated through. Add lime juice and adjust seasoning to taste.

              Prepare the Avocado Lime Sauce:

                - In a medium bowl, mash the avocado and then mix in Greek yogurt, lime juice, olive oil, salt, and pepper. Blend until smooth and creamy. If the sauce is too thick, add a little water until the desired consistency is reached.

                  Warm the Tortillas:
