2 cups cooked jasmine rice (preferably day-old)

8 oz flank steak, thinly sliced

1 large onion, thinly sliced

4 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

1 tablespoon vegetable oil

2 green onions, chopped (for garnish)

1 teaspoon ground black pepper

Salt to taste

Optional: 1 cup mixed vegetables (peas, carrots, and corn)

Marinate the Beef: In a bowl, combine the thinly sliced flank steak with 1 tablespoon of soy sauce, ground black pepper, and a pinch of salt. Let it marinate for at least 15-30 minutes for the flavors to meld.

    Prepare the Rice: If using leftover rice, break up any clumps with your hands. If making fresh rice, cook and let it cool to prevent it from becoming mushy in the stir-fry.

      Sauté Onions: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced onions and sauté until they become translucent and slightly caramelized, about 5 minutes.

        Cook the Beef: Push the onions to one side of the skillet. In the cleared space, add the marinated beef in a single layer. Let it sear without stirring for 1-2 minutes until browned. Then stir to combine with the onions and cook for another 2-3 minutes until the beef is cooked through.

          Add Garlic and Vegetables: Stir in the minced garlic and cook for about 30 seconds until fragrant. If you're using mixed vegetables, add them at this step and cook until they are heated through.

            Combine with Rice: Add the cooked rice to the skillet, breaking up any clumps. Pour in the remaining soy sauce and the oyster sauce. Drizzle with sesame oil.
