2 cups cooked jasmine rice (best if day-old)

1 lb ground beef

1 large onion, finely chopped

3 cloves garlic, minced

2 large eggs, beaten

1 cup frozen peas and carrots mix

3 green onions, sliced (for garnish)

4 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

Salt and pepper to taste

Prep the Ingredients: If using day-old rice, break up any clumps. Measure out all ingredients to ensure a smooth cooking process.

    Cook the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes. Season with salt and pepper, then transfer the beef to a plate and set aside.

      Sauté Onions and Garlic: In the same skillet, add another tablespoon of oil if needed. Add the chopped onion and sauté for about 3-4 minutes, or until translucent. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

        Scramble the Eggs: Push the onions to the side of the skillet and pour in the beaten eggs. Scramble the eggs until just set, then mix with the onions.

          Combine Rice and Add Beef: Add the cooked rice to the skillet, breaking up any remaining clumps. Stir in the cooked beef, frozen peas, and carrots. Use a spatula to mix everything evenly.

            Season the Fried Rice: Pour the soy sauce, oyster sauce, and sesame oil over the rice mixture. Toss to combine thoroughly, ensuring all the rice is evenly coated in the sauces.

              Finish Cooking: Let the fried rice cook for an additional 3-5 minutes, stirring occasionally, until everything is heated through and slightly crispy.
