1 sheet puff pastry (thawed if frozen)

1 cup pumpkin puree (canned or homemade)

4 oz goat cheese, crumbled

1 large egg

1/4 cup heavy cream

1 teaspoon fresh thyme leaves, plus extra for garnish

1/2 teaspoon garlic powder

1/2 teaspoon ground nutmeg

Salt and pepper to taste

1 tablespoon olive oil

1 small onion, finely chopped

1/2 cup grated Parmesan cheese

1 tablespoon balsamic glaze (optional for drizzling)

Instructions
 

Preheat the oven to 400°F (200°C).

    Prepare the puff pastry: Roll out the puff pastry on a lightly floured surface to smooth out any creases. Place it in a tart pan or onto a baking sheet lined with parchment paper, trimming the edges as necessary. Prick the base with a fork to avoid puffing.

      Sauté the onion: In a small skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent and golden, about 5-7 minutes. Remove from heat and let cool slightly.

        Make the filling: In a mixing bowl, combine the pumpkin puree, crumbled goat cheese, egg, heavy cream, sautéed onion, thyme, garlic powder, nutmeg, salt, and pepper. Mix until well combined and creamy.

          Assemble the tart: Pour the pumpkin filling evenly over the puff pastry base. Sprinkle the grated Parmesan cheese on top for added flavor and a crispy finish.

            Bake: Place the tart in the preheated oven and bake for 25-30 minutes, or until the filling is set and the edges of the pastry are golden brown.

              Cool and garnish: Remove the tart from the oven and let it cool for a few minutes. Garnish with extra fresh thyme leaves and a drizzle of balsamic glaze if desired.
