1 medium sweet potato (about 1 cup mashed)

1 cup all-purpose flour (or whole wheat flour)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

2 large eggs

1/2 cup buttermilk (or milk of choice)

1/4 cup melted coconut oil (or melted butter)

1/4 cup grated cheddar cheese (optional)

Fresh herbs (such as chives or parsley), chopped (for garnish)

Prep the Sweet Potato: Start by peeling the sweet potato and cutting it into chunks. Boil in water for about 15-20 minutes or until fork-tender. Drain and mash until smooth. Allow to cool slightly.
