1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

8 cups low-sodium chicken or turkey broth

2 cups cooked turkey, shredded or diced

1 cup uncooked brown rice

1 cup frozen peas

2 cups kale or spinach, roughly chopped

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: lemon wedges for serving

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until the onion becomes translucent. Stir in the minced garlic, diced carrots, and celery, and cook for an additional 3-4 minutes until the vegetables soften.

    Add Herbs and Broth: Sprinkle in the dried thyme, oregano, and bay leaf. Stir well to combine. Pour in the chicken or turkey broth and bring the mixture to a boil.

      Incorporate Turkey and Rice: Once the broth is boiling, add the cooked turkey and uncooked brown rice. Reduce the heat to low and cover the pot. Simmer for about 45 minutes to an hour, or until the rice is tender.
