4 bone-in pork chops (about 1 inch thick)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon dried rosemary

Zest of 1 lemon

For the Crispy Potatoes:

1.5 pounds baby potatoes, halved

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

    Prepare the Marinade: In a small bowl, combine olive oil, minced garlic, smoked paprika, thyme, rosemary, salt, pepper, and lemon zest. Whisk together until well mixed.
