Ingredients
  

1 lb large shrimp, peeled and deveined

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 red onion, sliced

3 tbsp olive oil

2 tsp chili powder

1 tsp cumin

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

Juice of 1 lime

8 small flour or corn tortillas

Fresh cilantro, for garnish

Avocado slices, for serving

Sour cream or yogurt, for serving (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.

    Prepare the Shrimp and Vegetables: In a large mixing bowl, combine the shrimp, sliced bell peppers, and onion. Drizzle with olive oil and add the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss everything together until the shrimp and vegetables are well coated in the oil and spices.

      Spread onto Sheet Pan: Pour the shrimp and vegetable mixture onto the prepared sheet pan, spreading it out into a single layer to ensure even cooking.

        Bake: Place the sheet pan in the preheated oven and bake for about 15-20 minutes, or until the shrimp are pink and opaque, and the vegetables are tender and slightly charred. Halfway through cooking, give everything a quick stir to ensure even roasting.

          Add Lime Juice: Once cooked, remove the sheet pan from the oven and squeeze fresh lime juice over the shrimp and vegetables for a burst of flavor.

            Warm the Tortillas: While the fajitas are roasting, warm the tortillas. You can do this either in a dry skillet over medium heat for about 30 seconds per side or wrapped in foil in the oven for the last 5 minutes of cooking.

              Assemble: To serve, layer the shrimp and vegetable mix onto warm tortillas, top with fresh cilantro, and add slices of avocado and a dollop of sour cream if desired.
