Shrimp and Grits with Cajun Cream

For the Grits:

1 cup stone-ground grits

4 cups chicken broth (or water)

1 cup heavy cream

1 cup sharp cheddar cheese, grated

1 tablespoon unsalted butter

Salt and pepper to taste

For the Shrimp:

1 pound large shrimp, peeled and deveined

3 tablespoons Cajun seasoning

2 tablespoons olive oil

4 slices bacon, diced

1/2 cup small yellow onion, finely chopped

1/2 cup red bell pepper, finely chopped

3 cloves garlic, minced

1/2 cup heavy cream

1 tablespoon Worcestershire sauce

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Grits: In a medium saucepan, bring the chicken broth to a boil. Slowly whisk in the stone-ground grits and reduce the heat to low. Cook, stirring occasionally, until thickened (about 20-25 minutes). Add the heavy cream, butter, cheese, salt, and pepper, mixing until creamy. Keep warm.

    Prepare the Shrimp: In a bowl, toss the shrimp with Cajun seasoning until evenly coated. Set aside.

      Sauté the Bacon: In a large skillet over medium heat, cook the diced bacon until crispy. Remove the bacon and drain on paper towels, leaving the drippings in the skillet.

        Cook the Vegetables: In the same skillet with the bacon drippings, add the onion and red bell pepper. Sauté for about 3-4 minutes until softened. Add the minced garlic and cook for another 1-2 minutes until fragrant.

          Cook the Shrimp: Increase the heat to medium-high and add the seasoned shrimp to the skillet. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque.

            Make the Cajun Cream Sauce: Pour in the heavy cream and Worcestershire sauce, stirring gently to combine. Let it simmer for 2-3 minutes until slightly thickened. Stir in the crispy bacon pieces.

              Serve: Spoon the creamy grits onto plates and top with the Cajun shrimp mixture. Garnish with fresh parsley and serve with lemon wedges on the side.
