Shrimp Avocado Ceviche

Ingredients
  

1 lb fresh shrimp, peeled and deveined

1/2 cup fresh lime juice (about 4-6 limes)

1 medium avocado, diced

1 cup cherry tomatoes, quartered

1/2 red onion, finely chopped

1 jalapeño pepper, finely chopped (seeded for less heat if desired)

1/4 cup fresh cilantro, chopped

Salt & pepper, to taste

Tortilla chips, for serving

Instructions
 

Prep the Shrimp: In a bowl, combine the peeled and deveined shrimp with the fresh lime juice. Ensure the shrimp is completely submerged in the lime juice. This will cook the shrimp. Cover and refrigerate for about 30-45 minutes, or until the shrimp turn opaque and firm.

    Mix the Ingredients: In a large mixing bowl, combine the diced avocado, quartered cherry tomatoes, finely chopped red onion, jalapeño, and chopped cilantro.

      Combine and Season: Once the shrimp is ready, drain off some of the excess lime juice (if there's a lot) but retain a bit for flavor. Gently fold the shrimp into the bowl with the avocado mixture. Season with salt and pepper to taste.

        Chill and Serve: Let the ceviche sit in the refrigerator for about 10 minutes to meld the flavors together. Serve chilled in small bowls with tortilla chips on the side for dipping.
