4 medium zucchinis, spiralized into zoodles

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

2 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

Juice and zest of 1 lemon

1/2 cup dry white wine (or low-sodium chicken broth)

Salt and pepper to taste

1/4 cup fresh parsley, chopped

Grated Parmesan cheese for serving (optional)

Instructions
 

Prepare the Zoodles: Using a spiralizer, create zucchini noodles (zoodles) from the zucchinis. Place them on paper towels to drain excess moisture while you prepare the shrimp.

    Cook the Shrimp: In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat. Once hot, add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

      Add the Shrimp: Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and pepper. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

        Make the Sauce: In the same skillet, pour in the white wine (or chicken broth) and scrape the bottom of the pan to deglaze, incorporating any flavorful bits. Allow it to simmer for about 2-3 minutes until reduced by half.

          Combine Ingredients: Reduce the heat to low, and stir in the remaining 2 tablespoons of butter, lemon juice, and lemon zest. Add the zoodles to the skillet, tossing them in the sauce for about 2-3 minutes until they are just tender but still have a bit of bite.

            Add the Shrimp Back: Return the cooked shrimp to the skillet and toss everything together until well combined and heated through. Adjust seasoning with additional salt and pepper if needed.

              Serve: Transfer the Shrimp Scampi Zoodles to serving plates, sprinkle with fresh parsley, and top with grated Parmesan cheese, if using. Enjoy your dish hot!
