Ingredients

2 cans young green jackfruit in brine or water (not syrup)

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon chili powder

1 cup BBQ sauce (your choice)

Salt and pepper, to taste

8 slider buns (mini hamburger buns)

Fresh coleslaw (optional, for topping)

Pickles (optional, for serving)

Instructions

Prepare the Jackfruit: Drain and rinse the canned jackfruit under cold water. Cut off the core sections and remove any seeds. Shred the jackfruit pieces with your fingers or a fork until they resemble pulled meat.

Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until they become translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

Cook the Jackfruit: Add the shredded jackfruit to the skillet. Sprinkle with smoked paprika, cumin, chili powder, salt, and pepper. Stir well to combine and cook for about 5 minutes, allowing the spices to coat the jackfruit evenly.

Add BBQ Sauce: Pour in the BBQ sauce, mixing thoroughly. Reduce the heat to low and let it simmer for about 10-15 minutes, stirring occasionally. The jackfruit should be tender and well-coated in the sauce.

Assemble the Sliders: While the jackfruit is simmering, lightly toast the slider buns. Once toasted, place a generous spoonful of the BBQ jackfruit onto the bottom half of each bun. If desired, top with fresh coleslaw for added crunch and flavor.

Serve: Place the top half of the bun on each slider. Serve immediately, and feel free to add pickles on the side for extra tanginess!
