Ingredients

1 medium head of cauliflower, chopped into florets

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 medium red bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, for garnish

1 avocado, sliced (optional)

Lime wedges, for serving

Instructions

Prepare the Cauliflower Rice: Using a food processor, pulse the cauliflower florets until they reach a rice-like consistency. Be careful not to over-process; you want it to resemble rice grains.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté for about 2-3 minutes until fragrant and translucent.

Add Cauliflower Rice: Stir in the cauliflower rice, cumin, smoked paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.

Incorporate Beans and Corn: Add the black beans and corn to the skillet. Mix well and cook for another 3-4 minutes, allowing everything to heat through. Adjust seasoning, if necessary.

Prep the Bowls: Divide the cauliflower rice and bean mixture among serving bowls. Top with diced red bell pepper, fresh cilantro, and avocado slices (if using).

Serve: Squeeze fresh lime juice over the bowls and serve immediately, offering extra lime wedges on the side for guests to add more zest as desired.
