Simple Sweet Potato and Black Bean Tacos

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper to taste

1 teaspoon lime juice

8 small corn or flour tortillas

1 avocado, sliced

Fresh cilantro, for garnish

Sour cream or Greek yogurt, for topping (optional)

Lime wedges, for serving

Instructions
 

Prepare the Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, smoked paprika, chili powder, cumin, salt, and pepper until evenly coated.

    Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). Spread the seasoned sweet potatoes on a baking sheet lined with parchment paper in a single layer. Roast in the oven for about 25-30 minutes, or until tender and slightly caramelized, flipping halfway through.

      Heat the Black Beans: While the sweet potatoes are roasting, place the black beans in a small saucepan over medium heat. Stir in the lime juice and season with a pinch of salt and pepper. Heat for about 5 minutes, stirring occasionally, until warmed through.

        Warm the Tortillas: In a skillet or directly over a gas burner, warm the tortillas on medium heat for about 30 seconds on each side, until soft and pliable. (You can also wrap them in foil and warm them in the oven.)

          Assemble the Tacos: Once the sweet potatoes are done, remove them from the oven. To assemble each taco, layer a few spoonfuls of sweet potatoes, a generous portion of black beans, and slices of avocado.

            Garnish and Serve: Top with fresh cilantro and add a dollop of sour cream or Greek yogurt if desired. Serve with lime wedges on the side for an extra zing.
