14 oz firm tofu, drained and pressed

2 tablespoons vegetable oil

1 cup bell peppers (red and green), sliced

1 cup broccoli florets

1 cup snap peas, trimmed

2 cloves garlic, minced

1-inch piece ginger, grated

1/4 cup low-sodium soy sauce

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)

Cooked rice or quinoa, for serving

Sesame seeds and chopped green onions, for garnish

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the cubed tofu and sauté until golden brown and crispy on all sides, about 7-10 minutes. Remove the tofu from the skillet and set aside.

    Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, and sauté for 30 seconds until fragrant. Add the bell peppers, broccoli, and snap peas, stirring frequently. Cook for about 5-7 minutes, or until the vegetables are tender-crisp.
