Ingredients

1 lb ground turkey

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

2 cups cooked brown rice or quinoa

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

1 large avocado, diced

1 cup shredded lettuce (iceberg or romaine)

½ cup shredded cheese (cheddar, Monterey Jack, or your choice)

Fresh cilantro for garnish (optional)

Lime wedges for serving

Instructions

In a large skillet, heat the olive oil over medium heat. Add the ground turkey and break it apart with a spatula.

Cook the turkey for about 5-7 minutes or until it's fully browned, stirring occasionally.

Sprinkle in the chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir well to combine, allowing the spices to cook for about 2 minutes.

While the turkey is cooking, prepare your bowls. In each serving bowl, create a base with brown rice or quinoa.

Layer the turkey mixture evenly over the rice/quinoa.

Add around ¼ cup of black beans and ¼ cup of corn to each bowl.

Top each bowl with diced tomatoes, shredded lettuce, and diced avocado.

Sprinkle shredded cheese over the top.

Garnish with fresh cilantro, if using, and serve with lime wedges on the side for a zesty finish.
