Simple Vegetable Stir-Fry with Tofu and Rice

Ingredients
  

1 block (14 oz) firm tofu, drained and pressed

2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots, snap peas)

2 tablespoons vegetable oil

3 cloves garlic, minced

1-inch piece ginger, grated

3 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon cornstarch (optional for coating tofu)

Salt and pepper, to taste

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

2 cups cooked rice (white, brown, or jasmine)

Instructions
 

Prepare the Tofu:

    Cut the pressed tofu into bite-sized cubes. If desired, toss the cubes in cornstarch for extra crispiness.

      Cook the Tofu:

        Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat. Add the tofu cubes in a single layer and cook for about 4-5 minutes, flipping to brown all sides evenly. Once golden and crispy, remove the tofu from the skillet and set aside.

          Sauté the Aromatics:

            In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.

              Add Mixed Vegetables:

                Toss in the mixed vegetables and stir-fry for 5-7 minutes, until they are vibrant and tender-crisp. Stir frequently to ensure even cooking.

                  Combine Ingredients:

                    Lower the heat to medium and return the crisped tofu to the skillet with the vegetables. Pour in the soy sauce and sesame oil, stirring to coat everything evenly. Cook for an additional 2-3 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

                      Serve:

                        Serve the stir-fry over the cooked rice. Top with sliced green onions and a sprinkle of sesame seeds for an extra crunch!
