Ingredients

2 medium-sized apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 teaspoon lemon juice

1 cup all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon, plus more for topping

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1/2 cup whole milk

1/2 cup brown sugar, packed

1/4 cup chopped walnuts or pecans (optional)

Instructions

Prepare the Apples: In a medium bowl, mix the diced apples with lemon juice and set aside. This helps to prevent browning and adds a touch of zing.

Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and 1 teaspoon of cinnamon until well combined.

Cream the Butter and Sugar: In another bowl, beat the softened butter until creamy. Gradually add the granulated sugar and beat until light and fluffy. This should take about 3 minutes.

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

Combine Mixtures: Gradually add the dry mixture to the butter-sugar mixture, alternating with the whole milk. Start with the dry ingredients and finish with them, mixing just until incorporated. Do not overmix.

Fold in Apples: Gently fold in the diced apples and nuts (if using) until evenly distributed.

Prepare Skillet: Heat a 10-inch oven-safe skillet over medium heat and add 1 tablespoon of butter to coat the bottom. Once melted, pour in the batter and spread it evenly.

Cinnamon Sugar Swirl: In a small bowl, combine the brown sugar and an extra sprinkle of cinnamon. Sprinkle this mixture evenly over the top of the batter, giving it a delightful swirl.

Cook on Stovetop: Continue cooking on medium heat for about 5-7 minutes, or until the edges start to set.

Finish in the Oven: Transfer the skillet to the preheated oven at 350°F (175°C) and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. The top should be golden brown.

Cool and Serve: Let the cake cool in the skillet for about 10 minutes before transferring to a serving plate. Serve warm with a dusting of powdered sugar if desired.
