Skillet Creamy Sausage & Rice

Ingredients
  

1 lb Italian sausage (or your choice of sausage), casings removed

1 cup long-grain white rice

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 cups chicken broth

1 cup heavy cream

1 cup frozen peas

2 tsp Italian seasoning

1 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sausage, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside, leaving the drippings in the pan.

    Sauté Vegetables: In the same skillet, add the chopped onion, bell pepper, and garlic. Sauté for about 3-4 minutes or until they soften and become fragrant.

      Add Rice: Sprinkle the rice into the skillet with the sautéed vegetables and stir for about 1-2 minutes to toast the rice slightly.

        Combine Ingredients: Pour in the chicken broth, and then add the heavy cream, Italian seasoning, smoked paprika, salt, and pepper. Stir well to combine everything.

          Cook the Rice: Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed most of the liquid.

            Stir in Peas and Sausage: Once the rice is tender, add the frozen peas and the cooked sausage back into the pan. Stir to combine everything and let it cook for another 5 minutes on low heat until the peas are heated through.

              Add Cheese: Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper if needed.

                Garnish & Serve: Remove from heat and garnish with fresh parsley. Serve warm and enjoy!
