Slow Cooker Balsamic Beef Stew

2 pounds beef chuck, cut into 1.5-inch cubes

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

4 medium carrots, sliced

3 medium potatoes, diced

1 cup mushrooms, sliced

1 cup beef broth

1 cup balsamic vinegar

2 tablespoons tomato paste

2 teaspoons dried thyme

2 teaspoons dried rosemary

1 bay leaf

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef cubes with salt and black pepper. Brown the beef in batches until all sides are nicely caramelized, about 4-5 minutes per batch. Transfer the beef to the slow cooker.

    Sauté the Aromatics: In the same skillet, add the diced onions and sauté for about 3-4 minutes until they become translucent. Add the minced garlic and cook for an additional 1 minute until fragrant. Pour this mixture over the beef in the slow cooker.

      Add Vegetables: To the slow cooker, add the sliced carrots, diced potatoes, and mushrooms. Stir gently to combine all the ingredients.

        Mix the Liquid Ingredients: In a medium bowl, whisk together the beef broth, balsamic vinegar, tomato paste, thyme, rosemary, and bay leaf. Pour this mixture over the beef and vegetables in the slow cooker.

          Cook the Stew: Cover the slow cooker with the lid and set it to cook on low for 8 hours or on high for 4 hours, until the beef is tender and the flavors are well blended.

            Finish and Serve: Once cooked, taste and adjust seasoning with salt and pepper if needed. Remove the bay leaf. Serve the stew hot, garnished with freshly chopped parsley.
