Ingredients

2 lbs boneless, skinless chicken breasts

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

12 oz fettuccine pasta (uncooked)

2 cups broccoli florets (fresh or frozen)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. In a tablespoon of olive oil, sear the chicken breasts in a skillet over medium-high heat for about 5 minutes on each side until golden brown. This step adds depth to the flavor but can be skipped if you're short on time.

Slow Cooker Setup: Place the seared chicken breasts in the slow cooker. Add minced garlic and pour chicken broth over the top. Drizzle the heavy cream all around the chicken to ensure it stays moist while cooking.

Cook the Chicken: Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the chicken is tender and easily shreds with a fork.

Shred the Chicken: Once the cooking time is complete, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.

Add Broccoli and Pasta: Stir in the fettuccine pasta and broccoli florets. Cover and cook on high for an additional 30 to 45 minutes, or until the pasta is cooked to your desired tenderness. You may need to add a little additional chicken broth to prevent sticking if necessary.

Finish the Dish: Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper if needed.

Serve: Garnish with fresh chopped parsley and serve warm, enjoyed with crusty bread or a garden salad on the side.
