Slow Cooker Creamy Mushroom Rice

1 cup Arborio rice

4 cups vegetable broth

1 cup heavy cream

2 cups mushrooms (cremini or button), sliced

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon soy sauce

Salt and pepper to taste

2 tablespoons olive oil

½ cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Aromatics: In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the garlic and cook for another minute until fragrant. Transfer mixture to the slow cooker.

    Prepare Rice and Mushrooms: Add the sliced mushrooms to the slow cooker, along with the Arborio rice, vegetable broth, heavy cream, dried thyme, dried rosemary, soy sauce, salt, and pepper. Stir well to combine all ingredients.

      Cook: Cover the slow cooker and cook on low for about 4-5 hours, or until the rice is tender and most of the liquid is absorbed, stirring halfway through if possible.

        Add Cheese (Optional): Once the rice is cooked, if desired, stir in the grated Parmesan cheese for an extra creamy texture. Adjust seasoning with more salt and pepper to taste.
