Slow Cooker Lentil Tacos with Avocado Salsa

Ingredients
  

1 cup dried green or brown lentils, rinsed

3 cups vegetable broth

1 small onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

8 small corn or flour tortillas

Fresh cilantro, chopped (for garnish)

Avocado Salsa:

2 ripe avocados, diced

1 medium tomato, diced

1/4 red onion, finely chopped

1 lime, juiced

Salt and pepper, to taste

Instructions
 

In a slow cooker, add the rinsed lentils, vegetable broth, diced onion, minced garlic, ground cumin, smoked paprika, chili powder, salt, and black pepper. Stir to combine.

    Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours, until the lentils are tender and have absorbed most of the broth.

      While the lentils are cooking, prepare the avocado salsa. In a medium bowl, gently mix the diced avocados, tomato, red onion, lime juice, and season with salt and pepper to taste. Set aside.

        Once the lentils are done, give them a good stir. If the mixture is too watery, let it cook uncovered on high for 15-20 minutes to thicken.

          Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, until pliable.

            To assemble the tacos, place a generous scoop of the lentil mixture on each tortilla, followed by a spoonful of avocado salsa. Garnish with fresh cilantro.

              Serve immediately with additional lime wedges on the side for an extra burst of flavor.
