3 pounds Yukon Gold potatoes, peeled and cubed

1 cup chicken or vegetable broth

1 cup whole milk

4 cloves garlic, minced

1/2 cup unsalted butter, cut into pieces

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 teaspoon dried thyme

1/2 teaspoon dried rosemary

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Begin by peeling and cubing the Yukon Gold potatoes into roughly equal-sized chunks to ensure even cooking.

    Place the cubed potatoes into the slow cooker. Add the minced garlic, salt, black pepper, thyme, and rosemary, stirring gently to combine.

      Pour in the chicken or vegetable broth and add the pieces of butter on top of the potatoes.

        Cover the slow cooker with its lid and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and easily pierced with a fork.

          Once cooked, use a potato masher or an immersion blender to mash the potatoes to your desired consistency.
