2 pounds Yukon Gold potatoes, peeled and cubed

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/4 cup chopped fresh chives (plus extra for garnish)

2 large eggs

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1/4 cup sour cream (for serving)

Cooking spray or olive oil (for greasing the waffle maker)

Instructions
 

Cook the Potatoes: Bring a large pot of salted water to a boil. Add the cubed potatoes and cook for about 15-20 minutes or until fork-tender. Drain and let them sit for a few minutes to allow excess moisture to escape.

    Mash the Potatoes: In a large mixing bowl, add the drained potatoes. Use a potato masher or fork to mash them until mostly smooth but with some lumps remaining for texture.

      Mix Ingredients: Stir in the grated Parmesan cheese, 1/2 cup of shredded mozzarella, chopped chives, eggs, milk, garlic powder, onion powder, salt, and pepper. Mix well until everything is combined.

        Preheat Waffle Maker: Preheat your waffle maker according to the manufacturer's instructions. Lightly grease the plates with cooking spray or olive oil.

          Cook the Waffles: Spoon a generous amount of the potato mixture into the preheated waffle maker, spreading it evenly to the edges. Close the lid and cook for about 5-7 minutes or until golden brown and crispy (cook time may vary based on your specific waffle maker).

            Repeat the Process: Continue until all the potato mixture is used up, greasing the waffle maker as necessary between batches.
