4 ears of fresh corn, husked

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon chipotle powder

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup mayonnaise

1/2 cup crumbled cotija cheese (or feta)

1/4 cup fresh cilantro, chopped

1 tablespoon lime juice

Lime wedges, for serving (optional)

Chili powder, for garnish (optional)

Instructions
 

Grill the Corn: Preheat your grill to medium-high heat. Skewer the corn on metal or soaked wooden skewers for easier handling. Brush the corn with olive oil and season it with smoked paprika, chipotle powder, garlic powder, salt, and pepper.

    Cook the Corn: Place the corn skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the kernels are charred and tender. Remove the corn from the grill and let it cool slightly.

      Cut the Corn Off the Cob: Once the corn is cool enough to handle, carefully cut the kernels off the cob using a sharp knife and place them in a mixing bowl.

        Mix the Dressing: In a separate bowl, combine the mayonnaise, lime juice, half of the cotija cheese, and freshly chopped cilantro. Mix well until all ingredients are combined.

          Combine: Add the grilled corn to the mayo mixture and stir until the corn is well coated with the creamy dressing.

            Serve in Cups: Transfer the smoky chipotle corn mixture into small cups or bowls. Top each cup with the remaining cotija cheese, a sprinkle of chili powder (if using), and additional chopped cilantro for garnish.

              Add Lime: Serve with lime wedges on the side for an extra zesty kick.
