Smothered Pork Chop and Scalloped Potato Casserole

For the Smothered Pork Chops:

4 bone-in pork chops (about 1 inch thick)

Salt and pepper, to taste

1 teaspoon smoked paprika

1 tablespoon olive oil

1 medium onion, sliced

3 cloves garlic, minced

1 cup low-sodium chicken broth

1 cup heavy cream

1 teaspoon Worcestershire sauce

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh parsley, chopped (for garnish)

For the Scalloped Potato Casserole:

4 large russet potatoes, thinly sliced

2 cups heavy cream

1 cup shredded sharp cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Season the Pork Chops: Pat the pork chops dry with paper towels and season both sides with salt, pepper, and smoked paprika.

      Sear the Pork Chops: In a large skillet, heat olive oil over medium-high heat. Add pork chops and sear until golden brown on both sides, about 4-5 minutes per side. Remove from the skillet and set aside.

        Sauté Onions and Garlic: In the same skillet, add sliced onions and cook until soft and translucent, about 5 minutes. Add minced garlic and cook for an additional minute until fragrant.

          Create the Sauce: Stir in the chicken broth, heavy cream, Worcestershire sauce, and thyme. Bring to a gentle simmer, scraping up any browned bits from the bottom of the skillet.

            Combine: Return the pork chops to the skillet, spooning some sauce over them. Reduce the heat to low and simmer for about 10 minutes, until the chops are cooked through.

              Prepare the Scalloped Potatoes: In a bowl, mix heavy cream, garlic powder, onion powder, salt, and pepper. In a greased 9x13-inch baking dish, layer half of the potatoes, then pour half of the cream mixture over them. Sprinkle half of the cheddar cheese over this layer. Repeat with the remaining potatoes, cream, and cheese, topping with Parmesan cheese.

                Bake the Casserole: Cover with foil and bake in the preheated oven for 40 minutes. Remove the foil and bake for an additional 20 minutes, until the potatoes are tender and the top is golden and bubbly.

                  Serve: On a serving plate, place a pork chop topped with the creamy sauce. Next to it, add a generous scoop of scalloped potatoes. Garnish with fresh parsley before serving.
