Ingredients

For the Snickerdoodle Topping:

1 ½ cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

¼ teaspoon salt

½ cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

1 teaspoon cream of tartar

1 teaspoon ground cinnamon

For the Cobbler Base:

2 cups fresh blueberries (or your choice of berries)

½ cup granulated sugar

1 tablespoon lemon juice

¼ teaspoon cinnamon

1 tablespoon cornstarch

For Dusting:

Cinnamon sugar (1 tablespoon sugar mixed with ½ teaspoon cinnamon)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

Prepare the Berry Base: In a large bowl, combine the fresh blueberries (or chosen berries) with ½ cup granulated sugar, lemon juice, ¼ teaspoon cinnamon, and cornstarch. Gently mix until the berries are well coated. Pour the berry mixture evenly into the bottom of the prepared baking dish.

Make the Snickerdoodle Topping: In another bowl, whisk together the flour, 1 cup granulated sugar, baking powder, salt, cream of tartar, and 1 teaspoon cinnamon. Pour in the melted butter, egg, and vanilla extract; stir until combined. The mixture should be thick but pourable; you can add a splash of milk if it’s too thick.

Add the Topping: Spoon the snickerdoodle batter over the berry mixture, trying to cover as much of the berries as possible. Don’t worry if some berries peek through.

Sprinkle Cinnamon Sugar: Dust the top of the snickerdoodle batter with the cinnamon sugar mixture evenly.

Bake the Cobbler: Place the dish in the preheated oven and bake for 30-35 minutes or until the top is golden brown and a toothpick inserted into the snickerdoodle topping comes out clean.

Cool and Serve: Allow the cobbler to cool for about 10 minutes before serving. It can be enjoyed warm or at room temperature and is fabulous with a scoop of vanilla ice cream or whipped cream on top.
