1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tbsp ground cinnamon (plus extra for topping)

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup buttermilk

¾ cup brown sugar

2 tbsp granulated sugar (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or grease it well.

    Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, using an electric mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is well incorporated. Add vanilla extract and mix until combined.

          Combine with Buttermilk: Stir in the buttermilk until just mixed.

            Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are okay.

              Prepare Cinnamon Sugar Topping: In a small bowl, combine the 2 tablespoons of granulated sugar with a teaspoon of ground cinnamon—this will be your topping.

                Fill Muffin Cups: Divide the muffin batter evenly among the lined muffin cups, filling each about ¾ of the way full. Sprinkle the cinnamon sugar mixture generously over the batter in each cup.

                  Bake: Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center of a muffin comes out clean.
