1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tbsp granulated sugar

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

1 cup sour cream

½ cup heavy cream

1 cup chopped Snickers bars (about 4-5 bars)

½ cup caramel sauce

½ cup chocolate sauce

Optional: Whipped cream and additional Snickers bites for garnish

Instructions
 

Prepare the crust: Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Stir until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form a crust. Bake in the preheated oven for 10 minutes. Allow to cool while preparing the filling.

    Make the cheesecake filling: In a large mixing bowl, using an electric mixer, beat the softened cream cheese until completely smooth and creamy, about 2-3 minutes. Gradually add 1 cup of sugar and continue mixing until fully incorporated.

      Incorporate eggs: Add the vanilla extract and then add the eggs one at a time, mixing well after each addition. Scraping down the sides of the bowl as necessary.

        Add sour cream and heavy cream: Slowly blend in the sour cream and heavy cream until the mixture is smooth and no lumps remain.

          Fold in Snickers: Gently fold in the chopped Snickers bars until evenly distributed in the batter.

            Assemble the cheesecake: Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

              Bake the cheesecake: Bake in the preheated oven for 55-60 minutes, or until the edges are set, and the center slightly jiggles. Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour.

                Chill the cheesecake: After it has cooled, refrigerate the cheesecake for at least 4 hours, or preferably overnight, to set completely.
