1 cup chia seeds

4 cups unsweetened almond milk (or any milk of your choice)

2 tablespoons maple syrup (or honey)

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

3 medium apples, peeled, cored, and diced

1 tablespoon lemon juice

1 tablespoon brown sugar (or coconut sugar)

1/2 cup granola (your choice)

1/2 cup chopped nuts (walnuts or pecans)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Chia Pudding: In a large mixing bowl, whisk together the chia seeds, almond milk, maple syrup, vanilla extract, ground cinnamon, nutmeg, and ginger until well combined. Cover and refrigerate for at least 4 hours, or overnight, until it thickens.

    Cook the Spiced Apples: In a medium saucepan over medium heat, combine the diced apples, lemon juice, and brown sugar. Cook for about 5-7 minutes, stirring occasionally, until the apples start to soften. Remove from heat and let cool slightly.

      Layer the Parfaits: In serving glasses or bowls, start by adding a layer of the chia pudding, followed by a layer of the spiced apples, then sprinkle a layer of granola and chopped nuts. Repeat the layers until the glasses are filled, finishing with a layer of chia pudding on top.

        Garnish: If desired, top each parfait with extra granola, nuts, and a few mint leaves for a fresh touch.
