Ingredients

1 cup rolled oats

1 cup whole wheat flour

1/2 cup almond butter (or any nut/seed butter of your choice)

1/3 cup honey or maple syrup

1/2 cup brown sugar, packed

1/4 cup milk (dairy or non-dairy)

1/2 teaspoon vanilla extract

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground cardamom

1/4 teaspoon ground cloves

1/4 teaspoon black pepper (optional, for an extra kick)

1/4 teaspoon salt

1/2 cup raisins or dried fruit (optional)

1/4 cup chopped nuts (walnuts or pecans, optional)

Instructions

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, whole wheat flour, baking soda, ground cinnamon, ground ginger, ground cardamom, ground cloves, black pepper (if using), and salt. Stir well until evenly mixed.

Combine Wet Ingredients: In another bowl, mix together the almond butter, honey or maple syrup, milk, and vanilla extract until smooth and creamy.

Combine Mixtures: Gradually add the wet mixture to the dry ingredients. Stir until just combined. Be careful not to overmix. If desired, fold in raisins or dried fruit and chopped nuts for added texture and flavor.

Shape Cookies: Using a tablespoon or a cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each cookie with the back of the spoon.

Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges are lightly golden and the tops feel set.

Cool: Once done, remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: These cookies can be enjoyed warm or at room temperature. Perfect for breakfast, a snack, or even dessert!
