1 cup red lentils, rinsed

1 can (14 oz) coconut milk

4 cups vegetable broth

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon curry powder

1 teaspoon ground cumin

1 teaspoon turmeric

1/2 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 medium carrot, diced

1 cup diced tomatoes (fresh or canned)

1 cup spinach or kale, chopped

2 tablespoons olive oil

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, for garnish

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until soft and translucent. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

    Add Spices: Sprinkle in the curry powder, cumin, turmeric, smoked paprika, and cayenne pepper (if using). Stir well for about 1 minute to toast the spices.

      Combine Ingredients: Add the rinsed red lentils, diced carrots, diced tomatoes, vegetable broth, and coconut milk to the pot. Stir to combine everything nicely.

        Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for about 25-30 minutes, or until the lentils are tender and the soup has thickened, stirring occasionally.

          Add Greens: Once the lentils are cooked, stir in the chopped spinach or kale, and let it cook for an additional 5 minutes until the greens are wilted and tender.
