6 lbs of mixed apples (such as Granny Smith, Honeycrisp, and Gala), peeled, cored, and chopped

1 cup brown sugar

1 cup granulated sugar

1 tablespoon cinnamon

1 teaspoon ground nutmeg

1 teaspoon ground cloves

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup apple cider (or apple juice)

1 tablespoon lemon juice

Instructions
 

Prepare the Apples: In a large mixing bowl, combine the chopped apples with the lemon juice to prevent browning. Toss well to coat.

    Combine Ingredients: In the prepared crockpot, add the apples, brown sugar, granulated sugar, cinnamon, nutmeg, cloves, salt, apple cider, and vanilla extract. Stir until all the ingredients are well mixed and the apples are fully coated with the spices and sugars.

      Cook on Low: Cover the crockpot and set it to low heat. Let the apple mixture cook for about 8 to 10 hours. Stir occasionally to ensure even cooking and prevent sticking.

        Check for Consistency: After cooking, the apples should be soft and mushy. Use an immersion blender to puree the apple mixture until you reach your desired smoothness. If you prefer a chunkier texture, you can mash it with a potato masher instead.
