Spicy Cajun Chicken Alfredo

For the Cajun Chicken:

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

Salt and pepper to taste

For the Alfredo Sauce:

1 cup heavy cream

1 cup grated Parmesan cheese

4 tablespoons unsalted butter

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

For the Pasta:

8 oz fettuccine or your pasta of choice

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Rinse the chicken breasts and pat them dry with paper towels. Rub the Cajun seasoning evenly over both sides of the chicken, followed by a sprinkle of salt and pepper.

    Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and sear for about 5-7 minutes per side, or until cooked through and golden brown. The internal temperature should reach 165°F (75°C). Once cooked, remove from the skillet and let rest for about 5 minutes before slicing.

      Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain the pasta and set aside.

        Make the Alfredo Sauce: In the same skillet used for the chicken, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Gradually pour in the heavy cream, stirring constantly. Bring the mixture to a gentle simmer.

          Add Cheese & Spice: Slowly whisk in the grated Parmesan cheese and red pepper flakes until the sauce is smooth and creamy. Season with salt and pepper to taste. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

            Combine and Serve: Add the cooked pasta to the Alfredo sauce, tossing well to coat the noodles evenly. Slice the Cajun chicken and lay it on top of the pasta. Garnish with freshly chopped parsley for a pop of color and serve hot.
