Spicy Chipotle Turkey Quesadilla Pockets

1 lb ground turkey

1 small onion, finely chopped

2 cloves garlic, minced

1-2 chipotle peppers in adobo sauce, chopped (adjust for spice level)

1 tsp smoked paprika

1 tsp cumin

1 tsp oregano

Salt and pepper to taste

1 cup shredded Monterey Jack cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

2 tbsp olive oil

Fresh cilantro, for garnish

Sour cream or Greek yogurt, for serving

Instructions
 

Cook the Turkey Filling: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until translucent. Add minced garlic and cook for an additional minute until fragrant.

    Add Ground Turkey: Increase the heat to medium-high and add the ground turkey. Cook, breaking it apart with a spatula, until browned and cooked through, about 6-8 minutes.

      Spice It Up: Stir in the chopped chipotle peppers, smoked paprika, cumin, oregano, salt, and pepper. Mix well and cook for another 2-3 minutes to blend the flavors. Remove from heat and let it cool slightly.

        Assemble the Quesadilla Pockets: Lay out the flour tortillas on a clean surface. On one half of each tortilla, sprinkle a layer of Monterey Jack and mozzarella cheese. Top the cheese with a generous spoonful of the turkey filling, then add another sprinkle of cheese on top.

          Fold and Cook: Fold the tortilla in half to cover the filling. Heat the remaining tablespoon of olive oil in the skillet over medium heat. Once hot, place the folded quesadillas in the skillet (you may need to do this in batches). Cook for about 3-4 minutes on each side or until golden brown and crispy.

            Serve: Remove the quesadilla pockets from the skillet and let them rest for a minute. Cut each quesadilla into halves or quarters for easy eating. Garnish with fresh cilantro and serve with sour cream or Greek yogurt.
