8 chicken drumsticks

3 tablespoons olive oil

4 cloves garlic, minced

2 tablespoons fresh lime juice (about 1 lime)

Zest of 1 lime

1 teaspoon chili powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon cayenne pepper (adjust based on spice preference)

Salt and black pepper to taste

1 tablespoon honey (optional for a touch of sweetness)

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 red onion, sliced into wedges

Fresh cilantro or parsley for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking tray with parchment paper.

    Marinate the Chicken: In a large mixing bowl, combine the olive oil, minced garlic, lime juice, lime zest, chili powder, smoked paprika, ground cumin, cayenne pepper, and a generous pinch of salt and black pepper. Mix well until a paste forms. If you're using honey, add it to the marinade as well.

      Coat the Drumsticks: Add the drumsticks to the marinade and toss them well until all sides are evenly coated. Let them marinate for at least 20 minutes for best flavor (or up to 2 hours in the refrigerator for deeper flavor).

        Prepare the Vegetables: While the chicken is marinating, prep the bell peppers and red onion. In a separate bowl, toss the sliced vegetables with a drizzle of olive oil, salt, and pepper.
