Spicy Garlic Tofu Bowls

Ingredients
  

14 oz firm tofu, pressed and cut into cubes

2 tablespoons soy sauce

2 tablespoons cornstarch

3 tablespoons vegetable oil

4 cloves garlic, minced

1 tablespoon ginger, minced

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon sesame oil

2 cups cooked jasmine rice (or quinoa for a healthier option)

1 cup bell peppers, thinly sliced (mix of colors for visual appeal)

1 cup broccoli florets

1 carrot, julienned

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Lime wedges (for serving)

Instructions
 

Prep the Tofu: In a medium bowl, toss the pressed and cubed tofu with soy sauce until evenly coated. Let it marinate for about 10 minutes.

    Coat the Tofu: After marinating, sprinkle the cornstarch over the tofu and toss gently to coat all sides. This will create a crispy texture when cooked.

      Cook the Tofu: Heat 2 tablespoons of the vegetable oil in a large non-stick skillet or wok over medium-high heat. Add the tofu cubes and fry until golden and crispy on all sides, about 8-10 minutes. Remove from the pan and set aside.

        Stir-fry the Veggies: In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic, minced ginger, and red pepper flakes. Sauté for about 30 seconds until fragrant.

          Add the Vegetables: Toss in the sliced bell peppers, broccoli florets, and julienned carrot. Stir-fry for about 5-7 minutes, or until the vegetables are tender but still crisp.

            Combine Tofu and Vegetables: Return the crispy tofu to the pan with the vegetables. Drizzle with sesame oil and toss everything to combine well. Allow it to cook for an additional 2 minutes to heat through.

              Assemble the Bowls: Place a serving of cooked jasmine rice (or quinoa) in each bowl. Top generously with the spicy garlic tofu and vegetable mixture.

                Garnish and Serve: Finish with sliced green onions, a sprinkling of sesame seeds, and a squeeze of fresh lime juice. Serve with lime wedges on the side for an extra flavor boost.
