Spicy Grilled Cauliflower Steaks

Ingredients
  

1 large head of cauliflower

4 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lemon

Fresh cilantro leaves, for garnish

Optional: Crumbled feta cheese or tahini sauce for serving

Instructions
 

Prepare the Cauliflower: Remove the leaves from the cauliflower and trim the stem. Place the cauliflower stem side down on a cutting board. Using a sharp knife, cut the cauliflower into 3/4-inch thick slices (these are your steaks). You should get about 3-4 nice “steaks.”

    Make the Marinade: In a small bowl, mix together the olive oil, smoked paprika, cayenne pepper, garlic powder, onion powder, ground cumin, salt, and black pepper until fully combined.

      Marinate the Steaks: Brush both sides of each cauliflower steak generously with the spice mixture. Ensure each steak is coated well. Allow them to marinate for at least 20 minutes (or up to an hour) to enhance the flavors.

        Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on your stovetop.

          Grill the Cauliflower: Once the grill is hot, carefully place the cauliflower steaks on it. Grill for about 5-7 minutes on each side, or until the cauliflower is tender and has nice grill marks. Brush with additional marinade while grilling for extra flavor.

            Serve: Remove the steaks from the grill and drizzle with fresh lemon juice. Optionally, top with crumbled feta cheese or drizzle with tahini sauce. Garnish with fresh cilantro leaves.

              Enjoy: Serve warm as a hearty side dish or a main course for a vegetarian option. Pair with grains like quinoa or a fresh salad for a complete meal.
